Everyone is going to pay a little more at some schools in Minnesota so a few can enjoy Vegan food.

Demand for Vegan, Allergen-Free Foods on College Campuses Drives Meal Price Increases

Some universities in the Minnesota State Colleges and Universities system will see price increases for meal plans next year as demand grows for vegan, locally-grown, organic and allergen-free options on college campuses.

On Tuesday, the MnSCU Board of Trustees authorized Bemidji State University, MSU Moorhead, MSU Mankato, Southwest Minnesota State University, St. Cloud State University and Winona State University to negotiate food service contracts.

The current contracts expire June 30, and the new contracts are set to begin July 1.

The six universities are expected to spend a total of $100 million to $125 million for dining for the first five years of the new contracts. Based on that estimate, an average student meal plan is expected to cost about $2,900 per year compared to the previous price of $2,600 per year.

MnSCU officials say the prices reflect the “growing complexity” of serving the student population, which includes special attention to allergen sensitivities such as nut, gluten and shellfish restrictions as well as vegan dining. Each contract also has goals for the vendors to find locally-sourced food and reduced reliance on GMOs.

The process of approving a food service vendor is a lengthy one; initial planning work began in late 2013, and the MnSCU office advertised nationally for food service consultants starting in February 2014.
